Most people know that knives are sharpened using a whetstone, but what is a whetstone and how do they work? A whetstone is a coarse and rough stone that is used for sharpening, polishing, and honing knives, knives, and other cutting tools.

Sharpeners are an essential part of everyday life for many people, and it’s important to choose an effective one. This can be especially important for beginners who may not have known what to look for in a sharpener, so I offer this guide to help you choose the best one for you. There are basically five types of sharpeners: manual, electric, water, diamond and whetstone.

The cutlery industry is one that can provide you with a good return on your initial investment, so there are many knives out there that you can choose from. However, the market is saturated with many different models. When shopping for a good knife, you cannot just pick any knife, you need to consider the four main types: serrated, straight, fillet, and Japanese. Also, there are many types of sharpeners for knives that can be used to sharpen knives. The most common are the diamond stone, ceramic knife sharpener, and steel rod.

Here are the most popular types of knife sharpeners. Some require more practice than others, but we’ll show you how each works and help you choose the best grinding tool for your kitchen.

Sharp knives are essential for productive work in the kitchen and perhaps even more so for your own safety. Cutting carrots with a blunt knife, seeing your finger slip under the blade because you have to try extra hard, is scary. Don’t get me wrong, sharp knives can make you bleed, but they allow you to control and cut easily enough to make you safer.

Basic principles of grinding

Sharpening a knife involves rubbing the blade with a grinder to smooth, straighten and polish it. For an even sharpening on a well-sharpened knife, the contact must be made at a certain angle. When you are done, you should be able to see the edge of the blade along the light strip of polished metal.

Why the angle is important

As mentioned earlier, a well-sharpened knife has a beveled edge with a sharp angle that differs significantly from the top surface of the blade. The standard blade angle is 20 degrees, measured from the plane of the blade.  The included number, on both sides of the bevel, is forty degrees. Japanese steel is often heated to 17 or 18 degrees. Outdoor tools and the like often have a 25 degree bevel.

The recommended angles are based on average values for each type of blade. Consult the manufacturer for the recommended angle for your knife.

The alternative is what you might call a razor. By using this shallow angle, 10 degrees or less, you create a very sharp but brittle edge on the blade. That’s why you see them on scalpels and razors for example. Neither are used on a cutting board. Even if they are chamfered at a 20-degree angle, they will bend when used on a shelf, so they need to be sharpened regularly. The 25 degree angle is used for heavy cutting tools, pins, etc.

Grinding versus milling

Sharpening is what you do between sharpening to keep your blades in working condition. The main difference is that grinding involves removing a thin layer of metal to restore the proper edge. Grinding usually does not do this, it makes the blade straight and smooth. With the right approach, honing can significantly increase the time between sharpenings, especially if you treat your knives before each use.

We shall distinguish between the ordinary devices used for sharpening and those intended for sharpening knives. We have three styles in each category, although there is a little legitimate overlap between them that we are still refining.

Types of knife sharpeners

Steel

They’re included in almost every knife set – a metal rod with a handle….. even though they are now ceramic, they are still called steel. They work as follows: the blade is pulled along the length of the shaft. This straightens the edge, eliminates small nicks, and polishes the metal so the food cuts better.

The technique involves sweeping the edge of the blade towards the base, as if you were shaving a very thin layer off the stem. Also, be sure to pull the blade across to run the steel through the entire length of the blade, from base to tip.

Handheld pencil sharpener

In the absence of an actual term, we use the term drag loops for devices with two surfaces at a certain angle that are dragged over the edge of the blade. For the first variation, lay the blade on your back, edge up, and move the hand tool along the length of the blade. It’s a great tool for keeping your knives clean.

These are usually two small pieces of titanium or similar material mounted at a certain angle in a device with a shielded handle. They have the advantage that they can be pulled over the blade without pressure being applied to it. This will give you an idea of your knife’s imperfections and help you know exactly where to sharpen it for optimal maintenance. If you have no other choice, you can remake a slightly worn blade by applying more pull and basically removing a small amount of metal. But in reality, these devices are only used for grinding.

Table top resistance grinder

It’s a fairly simple device that usually has a handle to hold it in place and slots into which the blades are pulled. The single-slot tool is designed for honing, the multi-slot tool opens up many other possibilities. From 3 and 4 different degrees of grinding to electric devices with rotating wheels.

They can be relatively effective for the actual sharpening, but they are not particularly accurate in the way the grooves grip the blade to the surfaces. And electric whetstones are notorious for wearing down blades, greatly reducing their lifespan. We recommend you use them to sharpen and trim your blades. When it’s time to sharpen your knives, use more efficient methods.

Roofing tiles

One definition of the word sharpen is to sharpen something by rubbing it. Simple description of what this stone is for.  The phonetic confusion comes from the fact that they work best when wet, be it water or oil. The liquid carries away the metal shavings, preventing the pores of the stone from becoming clogged and reducing the sharpness of the surface. If used correctly, you will get almost the same results with stones soaked in water or oil. Oil stones are less subject to wear and have a longer life.

Most whetstones have a different surface on each side: coarser for grinding and finer for polishing. Large commercial rock crushers often have a long triangle with an oil tank underneath. Ideally, the blade should be held at the correct angle and approximately 2.5 kg of pressure should be applied to the stone during the initial sharpening runs and 2.5 kg during the sharpening. As with most sharpening, move the cutting edge of the blade across the surface of the stone.

Precision stone-grinding equipment

This is a new generation of knife sharpening equipment. As a rule, the blade is clamped in a fixed position and the stone is placed at the desired angle. The device holds everything in place as you move the stone along the blade. They have a range of stone strips with different grits for sanding and polishing. There are often 10 or more, which can even be a bit daunting. Ideally, 3 or 4 stones, from the coarsest to the finest, should be used to obtain reliable results.

If the stone is wet, it should be moist, not dripping. With these systems it is very easy. Before use, the stone strips can be placed in a large glass of water for 5 minutes and are then ready for use. They are also relatively easy to replace when you switch to another grain. In most cases, a phone application is required to set the angle, but once set, the angle remains the same throughout the grinding process.

Electric pencil sharpener

There are electric grinders on the market, a good friend of mine was a meat grinder and used one. That was obvious, as his old knives had lost a noticeable sharpness when they were sharpened. Professional knife sharpeners use a rotating wheel, but if you don’t know exactly how much pressure to apply, you can literally sharpen your knives.

Electric pencil sharpeners for the home have appeared. With some protrusion in the straps, you can greatly reduce the wear and tear on your blades. They also offer multi-grain belts, so you can work your blade in the right order to get a sharp, polished edge. Safe they are not, but they are certainly less destructive than a coffee grinder type sharpener, and they are suitable for all levels of knife sharpening.
