Do you want pizza? Do you need it right away? Do you like it crusty? Then bake and freeze a double batch of these delicious, crispy, and keto pizza shells. Pizza Night is here, and it’s going to be quick and simple. Crunch!

  1. Preheat the oven to 350 degrees Fahrenheit (176 degrees Celsius). Use parchment paper or non-stick baking sheets to line two baking pans, and gently cover each with olive oil.

  2. Combine the dry ingredients in a medium-sized mixing basin. Stir in the eggs until they are completely mixed.

  3. Slowly pour in the hot water and stir until the dough thickens and turns sticky. Make a half-dozen cuts in the dough. Shape the dough into two balls by lightly moistening your palms with olive oil.

  4. Place each ball in the middle of the baking sheets, a drizzle of olive oil on top. Cover each ball with parchment paper. Shape and flatten the dough into two 10-inch (25 cm) circular, thin crusts using a rolling pin or your hands on top of the parchment sheets. Remove the top parchment sheets and throw them away. Prick holes all over the crusts with a fork to help prevent bubbles from developing.

  5. Bake for 20-25 minutes, or until gently browned, on the center rack(s).

  6. Remove the item and coat it with butter or coconut oil.

  7. Raise the temperature to the Broil position (Watch closely during this step to make sure that the crusts become crispy, yet not burnt). Broil the pizza base on both sides until light golden and crispy, about 1-3 minutes each side.

  8. Allow to cool completely before storing in the freezer until ready to use. If you can’t wait, preheat the oven to 425°F (218°C), sprinkle on the toppings, and bake for 5-10 minutes on the center rack, or until the cheese is melted and beginning to brown.
