Which chicken to use

The juiciest part of the chicken is the thigh, and that’s what we’re using in this recipe. Chicken thigh meat does not dry out like breast meat and absorbs many of the flavors of the marinade, so it remains juicy and flavorful after cooking. It is therefore preferable to use skinless and boneless chicken.

If you only have a boneless and skinless chicken breast, this is also possible, but you must be careful not to overcook the meat, otherwise it will become dry.

Which teriyaki sauce to use

I prefer the brand Soy Vay Veri Teriyaki Marinade & Sauce. It has a balanced flavor – sweet and strong, with notes of ginger, garlic and soy. Chicken marinating

Prepare chicken skewers on the grill

When the grill is hot, place the skewers on the grill, a few inches apart. Bake 3 to 5 minutes on each side until cooked through. At the end of the cooking time, brush both sides with the remaining sauce.

Sprinkle with sesame seeds and serve with hot mustard on the side, if desired.

  • 2 pounds skinless chicken thighs (or breasts), diced
  • 3/4 cup teriyaki sauce, divided (preferably veri teriyaki soy sauce)
  • 1/4 cup hot mustard, for dipping (optional)
  • 2 teaspoons sesame seeds

Instructions

  1. Soak wooden skewers for 20 minutes.
  2. Put the diced chicken in a large ziplock bag and pour half the sauce over the chicken. Close the bag and massage to coat the chicken.
  3. Marinate for at least 30 minutes in the refrigerator. Set aside the rest of the sauce to make frosting.
  4. Preheat grill to medium-high heat, about 375 degrees.
  5. Thread chicken onto skewers; do not thread too tightly.
  6. When the grill is hot, place the skewers a few inches apart on the grill plate. Bake 3 to 5 minutes on each side. At the end of the cooking time, brush both sides with the remaining sauce.
  7. Sprinkle with sesame seeds and serve with hot mustard on the side, if desired.
