Crispy chicken cutlets with sweet pepper

Crispy, juicy chicken strips prepared according to a restaurant recipe and topped with a sweet and spicy chilli sauce.

  • 2
    TBS
    Milk
  • Peanut butter for baking
  • 1 1/2
    cup
    sauces
  1. Cut the chicken breast into 2 cm wide strips.
  2. Dry well with paper towels
  3. Mix all the spices and powders in a small bowl. Mix well.
  4. Sprinkle the chicken evenly with half of the spice mixture.
  5. Stir to coat
  6. In a shallow bowl, mix flour, baking powder, cornstarch and the rest of the spice mixture.
  7. In another bowl, whisk together the eggs and milk.
  8. Dip each chicken strip into the flour mixture and press lightly to coat. Shake off excess flour.
  9. Then dip each strip into the egg and milk mixture.
  10. Repeat step #8.
  11. Place the chicken strips on a grill until the oil is hot.
  12. Fry the strips in heated peanut oil at 350°F for 5 to 7 minutes or until a meat thermometer inserted into the strips reads at least 165°F.
  13. Place the strips on a wire rack to drain the water.
  14. Pour the sweet chili sauce into a large bowl.
  15. Place the chicken strips in a bowl and gently dip them into the sauce to coat them.
  16. Place the strips back on the metal grid.
  17. Fry the strips for 2 minutes to make the sauce stick. (optional)
