Zucchini bread with low carbs



This nutty, low-carb zucchini bread is savory and moist, with just a touch of cheese, and will quickly become a favorite way to utilize this versatile vegetable. It’s high in fiber, minerals, and just plain deliciousness, and each slice contains just 1 gram of carbohydrates.

Medium (10 + 50 m + 30 m)



  1. Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).

  2. Rinse the zucchini but don’t peel. Finely shred and firmly squeeze out excess liquid from the zucchini using a cheesecloth or a clean kitchen towel.

  3. Beat the eggs in a medium-sized mixing bowl until frothy, then whisk in the shredded zucchini and shredded cheese.

  4. Combine the remaining ingredients in a mixing bowl. To make a smooth batter, combine all of the ingredients in a mixing bowl.

  5. Place the batter in a parchment-lined 9 x 5″ (23 x 13 cm) loaf pan. Poppy seeds should be sprinkled on the toast.

  6. Preheat the oven to 350°F and bake for 50 minutes. Allow for at least 30 minutes of cooling on the rack. Cut into pieces and serve with butter or a low-carb spread of your choice.
