I love a good Sunday roast – it’s one of the best ways to spend a ‘vegetarian’ day, and this recipe is one of my favorites. It’s a simple recipe to make, and it has more vegetables than most recipes. I wanted to share it with you as an easy and tasty recipe, so it’s a good one to make on a Sunday if you feel like a roast too.

If you grew up in Australia, Sunday supper consisted of roast lamb. Legs of lamb with all the trimmings are cooking in ovens throughout the nation. These delectable scents may transport us back to our youth and this much-anticipated family dinner.

Instructions

    1. Preheat the oven to 325 degrees Fahrenheit (160 degrees Celsius).

    2. 3-4 big rosemary sprigs should be placed in the middle of a roasting pan, and the lamb should be placed on top of the sprigs. Slit the upper side of the lamb into 1/2-3/4 inch (1.5-2cm) deep incisions. In the incisions, place the garlic slices and tiny rosemary stems.

    3. Season the lamb liberally with salt and pepper after coating it in olive oil.

    4. Place the lamb in the middle of the oven. Roast for 1 hour, or until it reaches an internal temperature of 160°F (70°C), is cooked to medium doneness, and the center is slightly pink.

    5. Cover the lamb loosely with tin foil and set it aside. Allow it to sit for 15-30 minutes before slicing to allow the fluids to redistribute.

    1. Squash should be sliced and de-seeded into thin wedges approximately 1/2 inch thick (1 cm). Leave it on if the skin is thin. Peel it if it’s too thick.

    2. In a roasting pan, place the squash. Season with salt and pepper and toss with the olive oil.

    3. Roast for 15-20 minutes, or until golden brown and soft. Add the green beans and toss lightly to combine the veggies. Cook for another 15 minutes, then remove from the heat.

Gravy
  1. Pour the chicken stock and pan juices into a saucepan while the veggies bake. Preheat the oven to medium-high.

  2. Skim any extra fat from the stock with a big spoon if necessary. To create a wonderful gravy with a smooth texture, whisk in the butter one piece at a time.

  3. The lamb should be served with roasted veggies and sauce on the side.
