Instructions

  1. Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius). Cut the pumpkin flesh into cubes after peeling it. Carry on with the rutabaga in the same way. Cut the shallot into wedges after peeling it. Garlic cloves should be peeled.

  2. In a baking dish, combine all of the ingredients. Season with salt and pepper and drizzle with olive oil.

  3. Roast for 25-30 minutes in the oven. Alternatively, you may cook the pumpkin and turnip in a large skillet over medium heat until tender.

  4. In a pot, combine the roasted veggies. Bring the veggie stock or water to a boil. Allow to boil for a few minutes. Remove the pan from the heat.

  5. Divide the butter into pieces and add to the pan. Using a hand blender, mix the soup. Toss in the lime juice, herbs, and season with salt and pepper to taste.

  6. With mayonnaise, toasted pumpkin seeds, or our wonderful parmesan croutons, serve the soup.
