Sandwich with pickles, deli turkey, and mustard mayo



Is the idea of a sandwich without bread making you squirm? It’s no issue! Toss up a pickle-wich. When you use a crispy dill pickle as a bread, this fast and delicious sandwich returns to the low-carb menu. Ours is topped with a mayo-mustard mixture and a classic turkey-and-cheese combination.

  1. Each pickle should be cut in half lengthwise. Scoop out the seeds with a spoon and make a little “tub” for the filling.

  2. Combine the mayonnaise and mustard in a mixing bowl. Spread the mixture on the pickles’ bottom “bun.”

  3. Deli turkey, tomato, lettuce, red onion, and cheese go on top. Place the second pickle “bun” on top and fasten with a toothpick.


I was able to make an original low-carb pickle sandwich for lunch today! The recipe was a second-hand one from the “Low Carb for Life” website, and it really did work. I picked up a jar of pickles at the supermarket and a 2-pack of deli bread at the corner bakery. The only change I made was to add a bit of mustard to the bread..
