Low-carb Peanut Butter Brownies – Recipe

If you’re like us, you’ve probably been looking for a low-carb dessert for a while now. The problem is, it’s hard to find recipes that fit the bill, and most of the ones out there are also too high in sugar. I’ve managed to put together something that is low-carb, and very low in sugar… but high on flavor.

You know how peanut butter is always the perfect dip for cookies, or that chocolate chip cookies are best eaten with a spoon? Well, these brownies are no exception. They’re made with eggs instead of flour, the perfect substitution for the cocoa powder and butter of your favorite brownie recipe.

A low-carb diet should always be a low-carb diet, but sometimes the only way to fit it into your daily routine is to use lower-carb alternatives. Here’s a general formula to help you make low-carb brownies and snickerdoodles, which get their sweetness from a mixture of healthy alternative sweeteners. This recipe makes a 9×9 inch pan of brownies.


Peanut butter brownies with a low carb count



This is the king of low-carb desserts. It’s rich and delicious, but it’s also good for you! Brownie with crunchy peanut butter swirls that is light and moist. These nutrient-dense over-the-top brownies are sure to please.

  1. Preheat the oven to 300 degrees Fahrenheit (150 degrees Celsius) and line an 8 × 8″ (20 x 20 centimeter) baking dish with parchment paper.

  2. Combine the ricotta, eggs, and vanilla in a large mixing basin. Whisk everything together until it’s smooth.

  3. Combine the almond flour, erythritol, cocoa powder, and baking powder in a large mixing bowl. Mix until everything is smooth and blended.

  4. Pour the batter into the baking dish and, if necessary, smooth the top with a spatula. Place dollop after dollop of peanut butter on top. By running the tip of a knife through the brownie mixture, swirl the peanut butter into the batter.

  5. Bake for 20 minutes, or until the filling is firm but still pliable. Allow to cool before serving.

  6. Cut into pieces and serve warm with a spoon, or let cool fully if you want a harder brownie to eat with your hands.


I’m not a huge fan of the taste of peanut butter… (I know, I know, I’m such an anti-peanut butter person).
