Risotto with mushrooms and cauliflower that is low in carbs

 

 

To create a delicious low-carb risotto, you don’t need to go to culinary school. In this shamelessly delicious dish, all you need are the rich and earthy ingredients. This is the first step in your low-carb culinary training. There’s no need for a diploma!

Instructions

  1. Bring the stock to a boil, then remove it from the heat.

  2. Chop the mushrooms and cook them till golden brown in butter.

  3. Add the shallot and garlic to the mushrooms after finely chopping them.

  4. Grate the cauliflower coarsely and add it to the pan.

  5. Half of the wine and all of the stock should be added.

  6. Allow to simmer, uncovered, until the liquid begins to reduce. Pour in the rest of the wine. Simmer until the cauliflower is tender and most of the liquid has evaporated, then add the cream.

  7. Remove the pan from the heat and add the parmesan cheese. Finish with a sprig of fresh thyme.

Tip!

Mix it up a little. Thin slices of leek, as well as chopped asparagus, make a wonderful addition to risotto. Do you have a hankering for something decadent? Cooked, diced bacon or pancetta may be added to the mix.
