We decided to give one a try (after all, what’s the worst that could happen?), and we ended up with one of our favorite dishes ever.

Beef stew in the old fashioned way
Beefy and naturally low in carbohydrates. To get soft meat and a lot of flavor, simmer this traditional meal low and slow. You won’t miss the potatoes with our buttery cauli mash. Promise.

Cut the chuck roast into 1″ cubes using a sharp knife (2.5cm). In a dutch oven or heavy-bottomed pot, sear the meat in stages over high heat. Season with salt and pepper to taste.
Finely chop the onion and garlic and add to the pan. Reduce the heat to low and cook for a few more minutes.
Combine the wine, water, bouillon cube, bay leaf, rosemary, and thyme in a large mixing bowl.
Bring the stew to a boil, then reduce to medium-low heat and cook for 1-1.5 hours. Carrot and celery should be finely sliced and added halfway through.
While the stew is cooking, make a cauliflower mash. Trimming and washing the cauliflower is the first step. Both the stem and the leaves may be used. Cut into florets or tiny bits.
Cook for 5 minutes in gently salted water, or until tender but not mushy. The water should be drained and discarded.
Add the butter and mash the cauliflower with an immersion blender or a hand-held electric mixer until it reaches the desired consistency. Season with nutmeg, salt, and pepper. On a platter or in a shallow dish, serve beside the stew.
This dish may also be made in a slow cooker. After completing step 2 of the recipe, combine all of the ingredients for the stew in your slow cooker. Cook for 4 hours on high or 6-8 hours on low.
