Boats of keto zucchini pizza with goat cheese
Greetings, matey! The taste in these cheesy zucchini boats is incredible! It’s the ideal vegetarian all-in-one dish: quick and easy to prepare, low in carbs, delicious, and nutritious — exactly the way we want it. Set sail!
Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius).
Cut the zucchini in half lengthwise and scoop out the seeds with a spoon (don’t throw them away!). On a baking sheet, arrange the zucchini boats.
Over medium heat, gently brown the garlic in a pan with approximately half of the olive oil. Combine the baby spinach and zucchini seeds in a mixing bowl. Fry until the potatoes are tender. Add a sprinkle of salt and freshly ground black pepper to taste.
Top the zucchini boats with the marinara sauce and the fried baby spinach and garlic. On top, grate the goat cheese.
Bake for 20–25 minutes, or until the zucchini is as soft as you want it and the cheese is golden brown.
Before serving, drizzle the zucchini boats with the remaining olive oil and season with freshly ground black pepper.
