Keto Diet. I love it. And I love zucchini. But I hate frying. And I’m not a fan of mayo. So here’s my low carb way to get zucchini fries with tomato mayo.


Zucchini fries with a spicy tomato mayo on the keto diet



Oh, sure. Take a bite out of these crispy keto oven-fried treats! The batter provides the perfect amount of flavor and crunch to the dish. Don’t forget to dip them in our delicious sauce.




  1. Refrigerate the tomato mayonnaise after mixing all of the ingredients together.

  2. Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius). Using parchment paper, line a baking sheet.

  3. In a small dish, crack the eggs and whisk them until smooth.

  4. In a separate bowl, combine the almond flour, parmesan cheese, and seasonings.

  5. Zucchini should be cut into sticks. Remove the seeds (or leave them alone—the decision is yours).

  6. Using the almond flour mixture, dredge the zucchini sticks until they are fully coated. After dipping them in the egg batter, roll them in the almond flour mixture again.

  7. Drizzle the olive oil over the zucchini sticks on the baking pan. Preheat the oven to 200°F and bake the fries for 20-25 minutes, or until they are beautifully toasted. Serve with a side of spicy tomato mayonnaise.
