Keto Tortilla with Beef and Salsa – Recipe

I am an avid reader of and the Lost Meals Blog, and I really enjoy the way the site is written and organized. It is an easy-to-read, informative blog that is filled with a lot of helpful information and great recipes. I discovered the blog through the popular blog, Fat For Fuel, where I was introduced to the Ketogenic diet by the owner of the blog, Jimmy Moore.

Keto is a popular diet on the internet, with many claiming that eating fat, protein and avoiding carbs will lead to weight loss, muscle growth, and better health. However, there is a lot of controversy over the diet, with many doctors and nutritionists claiming that it is dangerous and shouldn’t be followed.

Who doesn’t like a good taco? I know for a fact that I do, and that’s why I make a lot of them. They are satisfying, delicious, and quick. You can prepare them right at home and have them ready in no time. This keto tortilla recipe is one of the most popular recipes I’ve ever made.

  1. Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius).

  2. Whisk the eggs and egg whites until frothy, ideally for a few minutes, using an electric mixer with the whisk attachment. Cream the cream cheese in a separate large mixing bowl until creamy. In a separate bowl, mix together the eggs and cream cheese until a thick batter forms.

  3. In a small bowl, combine the salt, psyllium husk, and coconut flour. Continue to stir the batter as you add the flour mixture one spoon at a time. Allow the mixture to rest for a few minutes, or until it has thickened to the consistency of an American pancake batter. The speed with which the batter swells is determined on the brand of psyllium husk used; some trial and error may be required.

  4. Remove two baking sheets from the oven and line them with parchment paper. Spread the batter thinly (no more than 14 inch thick, 0.5cm) into 4–6 circles or 2 rectangles using a spatula.

  5. Bake for 5 minutes or longer on the top rack, or until the tortilla begins to brown around the edges. Check the bottom side to ensure it does not burn.
