  1. Combine the butter, garlic, salt, and pepper in a mixing bowl. Remove from the equation.

  2. Preheat the oven to 450 degrees Fahrenheit (225 degrees Celsius). Bring your meat to room temperature by removing it from the fridge for 20-30 minutes. Peel the garlic cloves but do not separate the entire garlic head into cloves.

  3. Place the broccoli, garlic, and tomatoes in a single layer in a large roasting pan that has been greased. Drizzle olive oil over top and season with thyme, oregano, or basil. After giving it a good swirl to coat it, pop it in the oven for 10 minutes.

  4. Season the meat liberally with salt and pepper after brushing it with olive oil. In a frying pan, rapidly cook over high heat. At this stage, all you’re want is a beautiful charred surface on the meat.

  5. Remove the pan from the oven and arrange the veggies to make space for the meat.

  6. Reduce the heat to 400°F (200°C) and return the pan to the oven for a few minutes to 15 minutes, depending on how well done you want your meat: medium-rare 135°F (58°C), medium 145°F (63°C), or well-done 155°F (68°C).

  7. Remove the meat from the oven and top each piece with a dollop of garlic butter. Serve immediately.
