Keto Pastrami Salad with Eggs & Croutons – Recipe

A few weeks ago I made a Keto Green Chile Pastrami Salad and it was a huge hit. It was so popular that I decided it deserved its own recipe post. This Keto Pastrami Salad is just as delicious as the original, but without the carbs. It is also very easy to make. The hard part is deciding which side dishes to pair it with.

Roasted pork is something that I just never get tired of. It’s a simple yet delicious meat that looks and tastes amazing on a plate. For this recipe, I wanted to explore a keto-friendly way to prepare pastrami, a type of meat that is very popular in NYC. It’s a low-carb, high fat meat that is perfect for the ketogenic diet because of its high fat content. It’s also a great source of protein and healthy fats that will keep you energized while on the ketogenic diet.

Pastrami salad with fried eggs and croutons on a keto diet



It’s a bright day. It’s delicious. It’s a little cheesy. It’s full of Keto deliciousness and comes together in no time. This is what we consider to be the ideal supper!

  1. If you don’t already have them, start preparing the low-carb parmesan croutons.

  2. Set aside the mayonnaise and mustard mixture.

  3. Toss the lettuce between two plates. Place the onion, sliced pickle, pastrami, and a liberal quantity of mustard mayonnaise on top of the lettuce.

  4. In a large nonstick frying pan, melt the butter over medium heat. Add the eggs to the pan and cook for approximately 2-3 minutes for sunny side up. To make the eggs over-easy, carefully turn them over with a spatula and cook for another 30 seconds. To taste, season with salt and pepper.

  5. Serve immediately with the eggs and parmesan croutons on the salad dish.


This salad may be made with any kind of meat, including leftover lamb, turkey, or grilled chicken. Alternatively, try it with bacon or ham that has been freshly cooked. You may also use arugula instead of lettuce.
