Instructions

  1. In a medium-sized mixing dish, combine the eggs, cottage cheese, and psyllium husk. Allow for a 5-10 minute thickening period.

  2. In a nonstick skillet, melt the butter or oil over medium-low heat. Cook the pancakes for 3–4 minutes each side in a hot skillet. Make sure they’re not too large or they’ll be difficult to flip.

  3. In a second bowl, beat the cream until soft peaks form.

  4. Serve the pancakes with whipped cream and your favorite fruit.
