Cornbread is a widely appreciated meal, despite its regional origins. It’s a real pleasure to have a tasty keto choice. The top on this version is crisp, and the crumb is soft yet gritty.

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). While you’re making the cornbread, heat an oiled 10″ (25 cm) cast-iron pan in the oven.

  2. In a mixing dish, combine all of the dry ingredients.

  3. Combine the melted butter, bacon grease, eggs, and water in a mixing bowl. Using a hand mixer, combine all of the ingredients. Add the corn extract and mix well.

  4. Fill the heated cast iron pan halfway with the cornbread mixture and bake for 18 to 20 minutes, or until lightly browned and firm to the touch.

Tip!

Corn extract is optional, although it gives the dish a more genuine corn taste. A pie pan or small oven-proof skillet would suffice if you don’t have a cast iron skillet.
