Chicken is one of my favorite meats to cook. I’ve been making this recipe for quite some time now and I’m glad I finally got around to sharing it. It’s a super easy and tasty chicken dinner.

But my new fave (and a new one for me) is coconut oil. It’s not the same thing as coconut milk, or coconut meat, which are both delicious too. Coconut curry chicken on a keto diet
Consider a smooth coconut sauce with aromatic lemongrass, warming ginger, and a dash of curry spice. Yes, of course. It’s true, and it’s occurring right now.

With the wide side of a knife or a pestle, crush the rough portion of the lemongrass and finely cut it.
In a large wok or frying pan, heat the coconut oil over medium-high heat. Combine the lemongrass, ginger, garlic, curry, and chili in a mixing bowl. Before adding the chicken, sauté for a few minutes. Season with salt and pepper. Cook till golden brown.
Combine the leek and bell pepper in a mixing bowl. Cook for a few minutes over medium heat. The veggies should still be crisp when you serve them.
Allow 5–10 minutes for everything to warm up before adding the coconut cream.
Before serving, garnish with cilantro and a sprinkling of lime zest.
Ginger can be frozen, in case you didn’t know. Simply wash it well, dry it, then shred it while it is still frozen, with the clean skin on!
This recipe for curry chicken is super easy to make and only has a few main ingredients. I used chicken breasts, but you could also use thighs or drumsticks for this recipe. I used small, but large, curry leaves for this recipe. These leaves can be found in Asian food stores or online .
