: 6 SERIES : Italian Roast Beef in Instant Pot
Time to cook: 1 HOUR AND 10 MINUTES 1 HOUR AND 10 MINUTES TOTAL TIME This Italian roast beef is delicious and cooks in the Instant Pot in no time. The taste of pepperoncini peppers is incredible!
- 3 to 4 lbs. of meat
- 2 tablespoons
extra virgin olive oil
- pepperoncini peppers in a 16-ounce can
- 12 swivel pieces, thinly sliced
- 1 cup b

- 2 garlic cloves, finely chopped
- 1 tablespoon powdered onion
- 1 tablespoon salt (garlic

1 Heat the butter in the Instant Pot on’skip’ mode.
2 Sear the meat for 5-6 minutes on each sides.
3 Combine half a can of pepperoncini peppers and 1/4 cup of the pepper juice in a jar.
4 Combine the onions, beef broth, garlic, and all of the spices in a large mixing bowl.
5 Close the lid, switch the tap to the closed position, and set the timer to 70 minutes (above).
6 After cooking, let the roast rest for 15 minutes under natural pressure before releasing the remaining pressure and slicing it into pieces.
7 Garnish with the remaining peperoncini pieces and serve warm.
Depending on the size of the roast in the Instant Pot, the cooking time may vary significantly. My roast was 3.2 pounds in weight. I discovered that an average cooking time is 70 minutes, so I added 15 minutes of natural tempering. If you’re cooking a bigger roast (5-6 pounds), allow 80-90 minutes for the flesh to get extremely soft.
