This quick pasta recipe is made with a blend of four cheeses and is a super easy pasta dish to make at home. A word of warning (do NOT think about calories or even count them :D).

Often we want to eat at a restaurant, but don’t want to go. These restaurant recipes are easy to recreate at home and are ideal for those moments.

Today I am going to show you a recipe that is very easy to make and my family loves it. So far, I’ve rarely made it at home, because you have to use four different exotic cheeses, and with a cheese-loving family like mine, it’s unlikely that all four cheeses would be available at my house.

I recently found this blend of four cheeses that solved the problem immediately. It’s a blend of four cheeses that can be used to make restaurant classics like four-cheese pizza or innovative dishes like our own four-cheese paratha.

  • It only takes a few simple ingredients. You can find most ingredients in any food pantry.
  • You can use a store-bought blend of 4 cheeses, as I do.
  • You can make your own blend of four cheeses to suit your taste.
  • Cottage cheese sauce is thick and so versatile that it can be used for any type of pasta.

Ingredients required

For this pasta dish with white sauce, you only need a few readily available ingredients.

Noodles: Spaghetti, fusilli, penne or any other pasta.

For Roux: You can use butter or olive oil or a mixture of both to make this cottage cheese sauce. But personally, I like to use just the oil. Flour and milk. All provided for.

Herbs and spices : Garlic, parsley, mixed Italian herbs, black pepper and salt.

For the cheese sauce : Light cream cheese mixture.

This Italian sauce is made with four cheeses. It has a creamy texture and is filled with the aroma of garlic and herbs. In this post, I talk about the different cheeses that can be used to make this cottage cheese sauce. Also, what kind of pasta works best with this white sauce.

Which type of cheese should be used for the white sauce for the pasta with four cheeses?

The four cheeses (Quattro formaggi) are a mixture of four random cheeses. These are usually provolone, cheddar, pecorino, asiago, gruyere or fontina cheeses, etc. But make sure they are all the same. A mixture of hard or aged cheeses goes well with pasta with white sauce.

What kind of paste should I use?

You can use any shape pasta, as the cottage cheese sauce is thick and sticks to all shapes of pasta. Penne, farfalle, gnocchi or spaghetti all go well with this four cheese sauce.

How to make a thick cheese sauce?

Milk and Roux are the basis of this cottage cheese sauce. Roux making is a simple process, which I describe below.

How to make a stirrer for white sauce?

Roux is a mixture of fat and flour that is cooked slowly. The flour is slowly toasted in butter until it has the consistency of a moist, lumpy sand mixture. Then, while shaking, slowly add the milk and you will obtain a smooth and silky white sauce.

For the white and creamy pasta sauce, add the cheese or cheese mix of your choice and you have a white, smooth and silky cheese sauce.

How to feed

You can serve this dish with cheese spaetzle alone or as a side dish. Everything tastes good. I serve it alongside a protein dish like mushrooms, chicken or paneer, or pair it with salads of your choice. Four cheeses with white sauce.

Store the remaining 4 cheese macaroons in an airtight freezer. It can be kept in the freezer for up to 3 days.

You can easily freeze this pasta with white sauce in a glass bowl or in ziplock bags in the freezer once it has cooled. Now that work at home is done and you’re back in the office, you can freeze this cheesy spaetzle with white sauce in individual servings and take it to work for lunch. It can be kept in the freezer for 2 months.

Instructions

  • 1 teaspoon black pepper
  • 1 tbsp parsley leaves (chopped)
  • 1 tbsp chopped basil leaves
  • In a large saucepan bring water to a boil and add salt.
  • Add the pasta and cook until al dente.
  • Drain the pasta and leave 1/2 cup of water.
  • For the four cheese sauce, put the garlic in a saucepan and cook for 1 minute. Add the flour and cook over low heat until lightly browned (1 minute).
  • Turn off the heat and whisk in the milk, cream and Italian seasoning.
  • Turn on the stove, add 1/2 cup pasta water and stir until the sauce begins to thicken.
  • Add the four cheese mixture to the go and cook until the sauce has thickened slightly.
  • Now season with the salt and add the black pepper.
  • Add the cooked pasta and mix gently with this sauce with four cheeses.
  • Serve it with a spice bowl and enjoy delicious pasta with four cheeses, made in a restaurant, that makes you uncomfortable at home.
