Mezcal is a smokey liquor created from agave plant juice that has been toasted. It tastes and smells like tequila, but with a smokier, earthier flavor. Because most mezcal is created in Oaxaca, Mexico, this drink is termed an Oaxacan cocktail.

It’s a protected Appellation of Origin, similar to Champagne or Cognac in France. Mezcal may only be named Mezcal if it is produced in the designated territories of Mexica.

Mezcal is made from over 30 different kinds and types of agave plants. The plant’s leaves are broad and thick, with points at the ends. When it is fully ripe, it develops a “pia,” or heart, from which juice is removed and mezcal is produced.

The plant takes seven to fifteen years to mature, depending on the type and whether it is farmed or wild, and one liter of mezcal might require up to 25 kilograms of agave.
