Aperol Spritz Jelly Recipe

There are many delicious cocktails that you can sip on, but this sweet and tangy Aperol Spritz jelly is one of my favorites. This is a simple recipe, but it’s filled with flavor. The only hard part is not eating it all before you’ve even finished making it!

It’s a simple recipe, but it’s a favorite of mine amongst my readers. I’ve personally made a couple of batches of aperol spritz jelly and can personally vouch for its delicious and refreshing taste (as well as the price). I’m sure everyone can find a use for this jelly – it goes great with aperol spritz cocktails or as a direct substitute for the classic aperol spritz cocktail.

In Italy, Aperol is traditionally served as an aperitif before a meal. A lightly alcoholic, slightly dry drink to whet the appetite for the upcoming meal. This recipe for Aperol Spritz Jelly adds a little spice, so you can serve it as a light, refreshing dessert or as a sweet post-meal snack. This is a great alternative to the classic Aperol Spritz cocktail. All you need are tangerines (for the juice), Aperol, Prosecco and gelatin. This dish is very easy to prepare and is impressive enough to share when you have guests over. The taste is fresh and tangy, and the texture is reminiscent of ordinary jelly. It’s like jelly, but for adults! Serve it with a plate of Mediterranean appetizers and you’re on your way to an impressive meal.

What is Aperol Spritz?

If you want to taste Italy in the summer, the Aperol Spritz is the drink of choice. They are so refreshing, perfect for summer. They’re not very sweet either. The Aperol Spritz is also colorful, some say reminiscent of the beautiful golden sunsets of Italy. The cocktail usually contains the following ingredients:

Aperol is a bright orange aperitif with a tangy orange taste. Aperol can be found in every liquor store.

Prosecco is a famous Italian sparkling wine (very similar to champagne). Use the coarse kind so the mixture is not too sweet.

Sparkling water – thins the mixture slightly so it’s not too sweet.

Fresh slice of orange – used to garnish the classic Aperol Spritz. In this recipe, we used a tangerine peel as a carrier for the jelly.

How to make an Aperol Spritz

For this recipe, first cut the tangerines in half and remove the flesh. Be careful not to damage the skin of the tangerine, as it forms the support for the jelly and you want it to look good. The juice is squeezed from the pulp and filtered into a jar, leaving the kernels behind.

The gelatine is added to this mixture and heated until completely dissolved. Aperol and Prosecco are mixed and added to the gelatin juice mixture. The mixture is now ready to be poured into tangerine shell molds. Place the moulds in a clean muffin tin and carefully pour in the mixture. Place in the refrigerator for one hour and cut into slices.

Expert advice

– If you want this recipe alcohol-free, you can replace the Aperol and Prosecco with 140 ml of orange juice or follow the Spritz Mocktail recipe. If you’re worried the mixture will be too sweet or fruity, you can add sparkling water or even carbonated apple juice.

– You can serve them as jello shots. Just pour the mixture into shot glasses instead of tangerine molds and refrigerate for an hour.

How to store Aperol Spritz

The Aperol Spritz jelly can be prepared a day in advance. Place the points on a baking sheet and cover with plastic wrap. Take it out of the pan a few minutes before serving to give it time to come to room temperature.

If you make them in shot glasses, they will keep in the fridge for up to 5 days.


Cut the tangerines in half.

Remove the flesh from the tangerines, making sure to keep the halves intact.

Put the flesh of the tangerine in a centrifuge and squeeze out the juice.

Pour the juice through a sieve into a small saucepan.

Mix with the gelatin powder and heat until blended.

Mix the Aperol Spritz with the Champagne Prosecco.

Add this mixture to the gelatin mixture.

Place the tangerine halves in a muffin tin.

Fill the tangerine shells with the gelatin mixture.

Place in the refrigerator for 1 hour.

Cut into slices and serve.
