No, this is the real McCoy – a fresh ghost pepper and a healthy dose of Carolina Ripers. But can the taste here withstand that kind of heat? What about ease of use? How versatile is Aka Miso Ghost Reaper hot sauce in the kitchen? We take it all apart to find out if this hot sauce is pure terror or an amazing delight.


I love it when a hot sauce starts its ingredient list with two of the most potent peppers on the planet. AKA Reaper of Ghosts: Ghost pepper, Carolina Reaper, rice vinegar, miso, tamari, sesame oil, togarashi and salt.

Bravado Spice calls this sauce an umami bomb, and that’s totally true. The first bite of fresh chili comes fast and hard. There’s a lot more to this sauce than just reheating it. It is earthy, spicy, sweet and salty at the same time – a truly unique taste for a hot sauce.

After the immediate spiciness, the rice vinegar creates an earthy sweetness on the tongue that really brings out the natural sweetness of the two very hot peppers. Next are red miso and tamari, both of which have their own umami flavors. You get a delicious level of sweet and salty, mild and spicy in every bite.

This sauce contains 210 mg of sodium per teaspoon (9% of the daily requirement). That’s a lot. But let’s face it, it’s the amount of sodium here mixed in with so many deliciously strong flavors. And this sauce is so spicy, you’ll probably have a hard time using it if you’re sitting still. Nonetheless – for those looking at sodium, keep this in mind.

Heat balance

If the name of these super hot peppers is on the label, it better be hot. And it’s also a Mizo Ghost reporter doing this.

These are two famous super hot peppers in the mix. Phantom pepper ranges from 855,000 thermal units according to Scoville to 1,041,427 units. And Carolina Riper’s dwarf, also this one, 1,400,000 to 2,200,000 SHU. Compare that to jalapeños – (2,500 to 8,000 SHU) and you’ll see that this hot sauce has some mega hot bad boys in it.

Of course, a.k.a. the Phantom Grim Reaper would not have diluted the spiciness of these fresh peppers with so many delicious ingredients. But it’s still very hot, especially for a hot sauce without extract. For me, this is a Habanero-like heat (100,000 to 350,000 SHU). Aka Miso Ghost-Reaper’s SHU is 116,000, which seems about right – maybe even a little more.

The heat moves quickly from the lips to the tip of the tongue and then to the back of the throat. It builds on that. And delayed. You will feel the burn within 5 to 10 minutes of eating.

The best thing about Aka Miso’s Ghost Reaper is how it balances that crazy natural spiciness with the unique taste of umami. It just works. The Bravado Spice Company is stirring up debate about the labeling of these peppers. It’s a real tribute to super shoots.


Can we use this kind of hot sauce? Maybe not as a daily driver (for the most part), but in some cases you’ll resort to the Aka Miso Ghost Reaper more often than you think.

Very tasty with tuna and sushi. If you’re looking for an alternative to wasabi for your next sushi dish, you’ve come to the right place. They will greedily and often reach for Mizo’s spirit mask. Just expect the spiciness to be different (wasabi doesn’t have the same power as chillies) and the temperature higher.

Also known as Miso Ghost Reaper is a fantastic addition to soups, especially ramen and other more exotic dishes. The water-based dilution reduces the pungency, but still provides a delicious level of heat and umami.

You can also add some spices to this spicy sauce to turn down the heat and provide a unique flavor variation. I mixed it with ketchup and barbecue sauce. It is then very suitable as a hot sauce for chips, fries, chicken fillets and the like. In fact, Umami is such a delicious flavor that you can often get the most out of this sauce by adding a little to the base.


The balance of flavor and heat should make this collection a staple for any hot sauce connoisseur. That’s right, aka Mizo the Ghostbuster is there in rarefied air. But the design of the Bravado Spice bottle is so beautiful in its simplicity that it’s hard not to notice it on the shelf. It’s clean, but with a lot of detail.

I really like the way Bravado Spice Company combines the heat meter with the fire symbols at the bottom of the label. And the fresh peppers in the strip really make them stand out at first glance. The branding and presentation of the label are well done.
